Q: Is there any way to list what songs I have checked off as “Skip when shuffling”, or to see which songs are Mono and which are Stereo?

A: Indeed, there are a few parameters in iTunes that continue to frustrate users by their inaccessibility from the main iTunes track listing. The settings and information that you’re asking about certainly fall into that group.
We suspect that this information could be extracted and organized neatly by an iTunes AppleScript or JavaScript, but we haven’t seen any such thing yet. Until that time, your only real option is to open the appropriate “Get Info” panel, and use the “Next” button (or Command-N / Control-N) to scroll through your library as fast as you can click or type.
